Ingredients :
3 eggs
Salt and black pepper to the taste
1 Tbsp. ghee, melted
2 shallots, minced
2 garlic cloves, minced
12 Oz. Brussels sprouts, thinly sliced
2 Oz. bacon, chopped
1 and ½ Tbsp. apple cider vinegar
Directions :
1. Put the bacon in a hot skillet over medium heat, move it about, and cook it until it’s nice and crisp.
2. Toss the shallots and garlic into the pan and cook for 30 seconds while stirring over medium heat.
3. Stir in the Brussels sprouts, season with salt and pepper, and then simmer for 5 minutes with some apple cider vinegar.
4. Put the bacon back in the pan and cook it for a further 5 minutes while stirring occasionally.
5. Stir in the ghee and then hollow out the middle.
6. Scramble some eggs in the pan, cook them to your liking, and then dish them up.
