Avocado Muffins

Ingredients :

4 eggs
6 bacon slices, chopped
1 yellow onion, chopped
1 cup coconut milk
2 cups avocado, pitted, peeled and chopped
Salt and black pepper to the taste
½ Tsp. baking soda
½ cup coconut flour

Directions :

1. Stir the onion and bacon around in a hot skillet for a few minutes until browning.
2. Mix the eggs and the mashed avocado together in a bowl using a fork.
3. Mix in the milk, seasonings, baking powder, and coconut flour.
4. To the mixture, add the bacon and whisk once more.
5. Prepare a muffin tin by greasing it with the coconut oil, then divide the egg and avocado mixture between the cups. Bake at 350 degrees for 20 minutes.
6. Breakfast muffins may be divided and served on individual plates.
