WASABI WINGS

Ingredients :

16 chicken wing pieces
1/8 cup vegetable oil
2 jalapeno peppers, roughly chopped
1 Tablespoon distilled vinegar
1 tsp sugar
1 tsp mustard powder
2 tbsp wasabi powder mixed with enough water to form a thick paste
oil for frying
pickled ginger for garnish
1 tsp salt
1 Tablespoon fresh horseradish (not the creamy type)
1/4 cup light soy sauce

Instructions:

1)Everything but the wings should be placed in a food processor and processed into a thick sauce or slurry.
2) Place the wings in a zip-top plastic bag. To coat the wings, combine a little bit of the wasabi with a couple of additional splashes of soy sauce.
3)In a saucepan, heat 1″ of oil until it is extremely hot. Shake off any excess marinade before gently adding the wings in a single layer.
4)Throw away the bag of leftover chicken marinade.
5)Cover the pan right away and let it cook for 7-8 minutes. Fry the wings for a further 7-8 minutes after turning them in the oil.
6) Serve the wings with pickled ginger and wasabi sauce while they are still hot.
