BACON-WRAPPED SHRIMP

INGREDIENTS : 

Bacon Wrapped Shrimp (Prawns):
1/4 cup barbecue sauce
3 tbsp low-sodium soy sauce
2 tbsp honey
2 tbsp lemon juice
3 tbsp minced garlic
1 tsp sesame oil
1/2 tsp minced ginger
1/2 tsp salt to season
1/4 tsp cracked black pepper
1 pound (500g) jumbo-sized shrimp, peeled and deveined, tails intact
14 slices bacon

INSTRUCTIONS : 

1)The top half of the oven’s top rack should be adjusted (just above halfway). Heat oven to medium-high (400°F | 200°C) broil (or grill) settings.
2)In a small bowl, mix the ginger, oil, juice, garlic, soy sauce, honey, and barbecue sauce. Half of the sauce should be poured into a separate, small bowl and kept in the fridge for subsequent use.
3)If you have the time, add the shrimp to the sauce in the small bowl, season with salt and pepper, and marinate for 10 minutes.
4)Cut each piece of bacon in half lengthwise. One shrimp should be wrapped in a slice of bacon. Repeat with the remaining shrimp and bacon.
5) Place the bacon-wrapped shrimp in a single layer on a baking sheet or tray that has been lined. 8 minutes on the broiler (or grill) or until bacon is crispy and sizzling. When shrimp or prawns are fully cooked, flip them over and broil for an additional 2 minutes.
6)With the remaining sauce, serve the shrimp or prawns.
7)With guacamole, please!
